PUMPKIN FIGARO 
16-18 Fig Newtons
1/2 c. cream cheese
1/2 c. chunky peanut butter
1 1/2 c. pureed pumpkin
3/4 c. sugar
1 egg
1 tsp. pumpkin pie spice
1 tbsp. vanilla
5 oz. evaporated milk
Fresh whipped cream

Grease and flour an 8 x 8 pan. Closely lay Fig Newtons in pan. Mix together cream cheese and peanut butter thoroughly. Spread mixture over Fig Newtons, creating a tight seal.

Mix pumpkin, sugar, egg, spice, vanilla, and milk. Pour mixture over layered Fig Newtons with the creamed peanut mixture. Bake at 350 degrees for approximately 50 minutes to 1 hour. Serve with whipped cream.
