CHEESY POTATO CASSEROLE 
10 potatoes, cubed
1/2 green pepper, chopped
1/2 red pepper, chopped
1 sm. onion, chopped
1/4 c. bacon bits
Salt, pepper and garlic powder to taste
1 to 2 c. Velveeta cheese, cubed
1 stick butter, melted
Potato chips (any kind), crushed

Par boil potatoes (do not overcook). Drain. Melt butter in 13 x 9 inch pan or large glass casserole. Add potatoes, salt, pepper, garlic powder, peppers, onion, bacon bits, and cheese. Mix; top with crushed potato chips. Drizzle more melted butter over top before baking. Bake at 350 degrees for 45 minutes, uncovered, until brown.
