CHRISTMAS RAINBOW CAKE 
1 white cake mix
1 sm. red Jello (any flavor, cherry, strawberry...)
1 sm. green Jello (lime)
2 c. boiling water
1 med. size Cool Whip
Coconut (opt. for decoration)
Food color (opt. for decoration)

Prepare cake mix as directed on box. Use round pans. Cool 5 minutes, remove from pans, cool, clean pans, put cake back into clean pans. Prick holes in cake with toothpick. Pour 1 cup boiling water in Jello, dissolve well. Pour over one layer. Do same with other layer and Jello. Refrigerate 3 to 4 hours or overnight. Dip pan in warm water to loosen. Frost with Cool Whip.

TO DECORATE: Make stencil out of paper, cut out design (holly, bells...). Use food color to dye small amount of coconut. Hold stencil over cake, sprinkle coconut over stencil, remove stencil, sprinkle white coconut around remainder of cake. Keep refrigerated.
