POTATOES ROMANOFF 
2 patties or 2 c. frozen shredded hash brown potatoes
1 c. cottage cheese
1 c. sour cream
2 tbsp. chopped green onion
2 tbsp. chopped parsley
1 garlic clove, mixed
1/2 tsp. salt
1 tbsp. butter

1. Place frozen hash brown potatoes in microwave safe 1 quart casserole. Cover with plastic wrap; microwave at high (100% power) 3 minutes. Stir; microwave at high (100% power) 3 minutes longer.

2. Add cottage cheese, sour cream, green onion, parsley, garlic and salt. Mix well; dot with butter. Cover with plastic wrap; microwave at high (100% power) 4 minutes. Stir.

3. Cover with paper towel; microwave at high (100% power) 2 minutes. Remove from oven; let stand 5 minutes, covered with paper towel, before serving. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
