TOM'S DOUBLE BAKE POTATOES 
1/2 stick butter
5 red boiling potatoes
6 white baking potatoes
1 c. sour cream
1 pkg. Philadelphia cream cheese
1 c. grated cheese
1/2 c. milk or cream
1 tsp. paprika

Microwave baking potatoes until done. Meanwhile, boil the red potatoes in water with salt until done. After both potatoes are ready, take a baking potato and spoon out only the center. Leave rim 1/16 inch in diameter to assure a firm potato shell. After spooning out all baking potatoes, mix with red potatoes. Add other ingredients mentioned above but grated cheese and paprika.

Mash together until smooth, not too runny, firm but not stiff. Spoon back into potato shell. Add grated cheese and paprika over the top of each potato. Bake on a cookie sheet and bake at 350 degrees until cheese has melted. Should serve 12.

Since microwave ovens vary in power, you may need to adjust your cooking time.
