SOUTHERN CANNON BALLS 
1 lb. hot bulk sausage
2 c. shredded sharp Cheddar cheese
2 c. biscuit mix
2 tbsp. grated onion
1 tbsp. poultry seasoning

Combine all ingredients, mixing well. Roll into walnut-size balls. Place on an ungreased baking sheet and bake at 400 degrees for 15 minutes. Drain on paper towels. Serve hot. Yield: about 48 balls.
