SOUTHERN CANNON BALLS 
1 lb. hot sausage
2 c. shredded sharp Cheddar cheese
2 c. biscuit mix
2 tbsp. grated onion
1 tbsp. poultry seasoning

Combine all ingredients, mixing well. Roll into walnut-size balls. Place on an ungreased baking sheet and bake at 400 degrees for 15 minutes. Drain on paper towels. Serve hot. Yields about 48 balls. May be kept warm in crock pot.
