CHICKEN CURRY 
2 tbsp. bacon fat or salad oil
2 lg. onions, chopped
2 tbsp. flour
1/2 tsp. sugar
1/2 tsp. salt
1 tbsp. curry powder
2 c. chicken broth
3 to 4 c. chicken, cooked & cubed
1/2 c. celery, diced (optional)

Melt in deep pan the bacon fat or oil. Add and cook slowly until golden the chopped onions. Stir in the flour, sugar, salt and curry powder. Add chicken broth. Cook and stir until thick. Test to see if it needs salt and pepper. Add the chicken. (If you use the celery, add it with the onions.)

To serve, have ready a large bowl of fluffy rice and small bowls of any (or all) of the following: Banana, chopped Chutney (peach or nectarine) Coconut, toasted Egg Whites, cooked & chopped Egg Yolks, cooked & chopped Onions, chopped or French fried onions Salted peanuts, chopped Green pepper, finely chopped Crushed pineapple, drained Tomatoes, finely chopped Raisins (dark or light)
