RICE PUDDING 
1 qt. milk
1 can evaporated milk
1/2 c. sugar
1/2 c. rice (long grain)
2 eggs
1 tsp. vanilla
Dash of salt

Scald 1 quart milk. Add 1/2 cup rice. Boil 20 minutes or until rice is soft. Add 1/2 cup evaporated milk. Set aside.

Beat well 2 eggs. Add 1/2 cup sugar, beat. Add remaining evaporated milk. Fold into rice mixture. Add vanilla and salt. Bring almost to a boil (do not boil) until it thickens. Pour into baking dish. Sprinkle with nutmeg or cinnamon. Cool.
