APPLE MUFFINS 
2 1/2 c. all-purpose flour
1 1/2 c. packed brown sugar
2/3 cup oil
1 egg
1 c. sour milk
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 1/2 c. apple, diced
1/2 c. chopped nuts
melted butter, for topping

Stir together brown sugar, oil and egg. Set aside. Stir together milk, baking soda, salt, vanilla and add to brown sugar mixture alternating with flour. Fold in diced apple (don't peel) and chopped nuts. Pour into tin and sprinkle with melted butter.

Bake at 325°F for 30 minutes.
