EASY APPLE OR CRANBERRY MUFFINS 
2 med. apples, diced; or 1/2 c. chopped cranberries
2 tbsp. sugar
1/8 tsp. nutmeg
2 c. flour
1/2 tsp. cinnamon
4 tsp. baking powder
1/2 c. sugar
6 tbsp. butter
1 egg white, beat until frothy
3/4 c. milk
Brown sugar (optional)

Mix together the fruit, 2 tablespoons sugar and nutmeg; set aside.

Sift together the flour, cinnamon, baking powder and sugar.

Cut the butter into the dry mixture with a pie blender. Add the fruit mixture to this. Set aside.

Now, mix the egg white into the milk. Add just enough of this liquid to the batter to make it moist. It will be stiff. Fill muffin cups 3/4 full. Sprinkle the tops with brown sugar if desired. Bake at 350 degrees F. for 15 minutes.
