2 eggs 3/4 c. sugar 2 (8 oz.) pkgs. cream cheese, softened 1 tsp. vanilla 16 vanilla wafers 1 can cherry pie filling Beat eggs with sugar and add cream cheese in pieces. Beat until smooth, about 10 minutes. Add vanilla. Place 16 cupcake papers in muffin tins. Place 1 vanilla wafer in bottom of each. Fill 3/4 full with cream cheese mixture. Bake at 375 degrees for 15 to 18 minutes or until set. They will look pale and sunken after cooling. Remove cupcakes when cool. Top with spoonful of cherry pie filling. |
