BASEBALL BEEF STEW 
1 1/2 lbs. stew beef
1 med. onion, diced
4 carrots, diced
5 potatoes, sliced
Salt and pepper to taste
2 tbsp. sugar
2 tbsp. cornstarch or flour
1 (12 oz.) can V-8 juice

Cut meat into small pieces. Put into bottom of greased casserole. Add layer of onion, layer of carrot, layer of potatoes. Add salt and pepper. Sprinkle with mixture of sugar and cornstarch. Pour V-8 juice over top of vegetables. Cover casserole tightly with aluminum foil. Bake 4 hours at 250 degrees.
