LONG JOHN AND RAISED DONUT DOUGH 
2 c. scalded milk
5 tbsp. shortening
5 tbsp. sugar
1 tbsp. salt
2 eggs, beaten
1/2 c. warm water
2 pkg. dry yeast
Flour

FROSTING FOR LONG JOHNS:

2 c. powdered sugar
1 tsp. mapleine

Add water to make frosting thick enough to spread. Spread while warm.

Cool milk. Add all other ingredients except flour. Dissolve yeast in warm water. Add enough flour to make soft dough. Cover and let raise until doubled in size. Punch down and let raise again for 1 hour.

Turn on floured surface roll out 1 inch thickness cut with pizza cutter or donut cutter.

Let raise 1/2 hour and fry in lard until light brown. Frost long johns. Dip donuts in sugar.

How much flour is required please? We don't have Mapleine in Australia, at least where I live, will maple syrup suffice?

Hi Ian,

You might be able to find some other brand of maple extract or flavoring - Mapleine is concentrated in flavor. If you want to use maple syrup, I would use about 1/2 cup and thicken it up with a little cornstarch and confectioners sugar and boil until its of the right consistency for a glaze. Let us know how it turns out!

Start with 2 cups flour but with this amount of liquids I believe 4 cups of flour is possible.
