PASTEL LIQUOR MOUSSE 
2/3 c. Creme de Menthe
16 marshmallows
2 c. heavy cream
1 to 2 tsp. sugar
1 c. sour cream
Food coloring, optional
1 c. sliced strawberries

Combine liquor and marshmallows and stir over low heat until marshmallows are melted. Cool. Whip cream and blend marshmallow/liquor mixture into the whipped cream. Turn into 5 cup mold and freeze. Garnish with fruit or sauces.

Strawberry Cream Sauce: Combine 1 cup sliced strawberries, 1 cup sour cream and 2 teaspoon sugar.

DIETITIAN'S NOTE:

By using evaporated skim milk instead of heavy cream you can make 1312 calories and 556 mg cholesterol disappear from this recipe! The sour cream can be replaced by one of the new sour cream substitutes or nonfat plain yogurt without sacrificing a bit of flavor.
