MEXI-CORN CASSEROLE 
2 cans Mexicorn drained
1 small can chopped green chilies
1 cube butter
1 8 oz cream cheese
grated cheddar cheese
salt & pepper to taste

In saucepan, melt cream cheese and butter till smooth. Add green chilies and Mexicorn, and salt and pepper. Stir till mixed well.

Put in casserole dish and top with grated Cheddar cheese.

Bake at 350°F for about 30 minutes.

Recipe can easily be doubled.
