CHEESY, VEGETABLE CASSEROLE 
2 (10 oz.) frozen mixed vegetables
1 c. chopped celery
1/3 c. chopped onion (med. size)
1 c. mayonnaise
1/2 c. (4 oz.) shredded sharp Cheddar cheese
1/2 c. melted butter (stick)
1/4 tsp. salt & pepper (or to your taste)

Cook frozen vegetables and drain. Mix with all of the above ingredients. Spoon into a 2 quart greased casserole.

TOPPING:

1 c. crushed saltines
1/2 c. shredded sharp Cheddar cheese

Sprinkle over top of casserole. Bake uncovered at 300 degrees for 30-40 minutes.
