PECAN - OATMEAL COOKIES 
1 c. shortening
1 c. brown sugar
1 c. white sugar
2 eggs, beaten
1 tsp. vanilla
1 1/2 c. flour (plain)
1 tsp. salt
1 tsp. baking soda
2 1/4 c. oatmeal
3/4 c. pecans, chopped

Cream together shortening, brown sugar and white sugar. Add eggs and vanilla. Add flour, salt and soda. Add oatmeal and pecans. Form into rolls and chill well. Slice 1/2 inch thick or spoon onto cookie sheet, about 2 inches apart. Bake 10 minutes at 350 degrees or until light brown.
