CRISPY CATFISH | |
4-6 fresh catfish filets 1 1/2 c. cornmeal (yellow) 1 tsp. cayenne pepper 1/2 tsp. paprika 1 tsp. garlic powder 1/2 tsp. sugar 1 tsp. salt Vegetable oil Mix dry ingredients in a plastic bag. Rinse fish with cold water (fresh catfish will have a slightly pink color to it). Shake off excess water. While fish is still wet dip into your cornmeal mixture. Coat fish thoroughly with cornmeal. Fill a pan with vegetable oil up to half the thickness of the filet. Heat oil over a medium to high flame until it is very hot. Place coated filets in the pan with the outer side of the fish facing down. Fish should sizzle while its in the pan. Fry fish on the first side for about 15 minutes. Then turn and fry for another 10 minutes. Frying time may vary depending on the thickness of fish; adjust heat accordingly. Drain fried fish on absorbent paper towel before serving. |
