LEMON AND GARLIC CHICKEN 
4 chicken breasts (skinned and boneless, whole or cut up)
1 pkg. mushrooms (sliced)
1 lg. onion (sliced)
1 stick butter
1/4 c. lemon juice
1 clove crushed garlic
1/4 tsp. thyme (to taste)
Green peppers and other vegetables (optional)

Saute butter, garlic, lemon juice, onion and mushrooms. Cover and let cook down. When almost finished uncover and add chicken and thyme. Cook 5 to 10 minutes until chicken is done. Serve over rice pilaf or white rice.
