LEMON MERINGUE PIE 
3 eggs
1 c. sugar
1/4 c. lemon juice
1 1/4 c. warm water
1/8 tsp. salt
3 tbsp. cornstarch

Separate eggs. Mix cornstarch, sugar, salt and add to beaten egg yolk. Add lemon juice, then warm water. Stir constantly over medium heat until thick. Add 1 tablespoon butter. Pour into prepared pastry shell.

MERINGUE: Beat egg whites until stiff. Add 6 tablespoons sugar, 2 tablespoons at a time folded in. Add 1 teaspoon vanilla. Bake at 350 degrees until golden brown, about 15 minutes.
