LEMON BARS 
2 c. self-rising flour
1/2 c. confectioner's sugar
1 c. unsalted butter, softened

Combine ingredients and blend until mixture resembles pie crust. Press into bottom of 9 x 13 inch pan. Bake at 350 degrees for 20 minutes. While crust is baking prepare the following: 4 tbsp. self-rising flour 2 c. sugar 6 tbsp. lemon juice

Beat ingredients and pour over hot crust as it is removed from oven. Return pan to oven and bake for 20 minutes. After pan is removed from oven, sprinkle with confectioner's sugar. Cool and cut into bars.
