LEMON COCONUT BARS | |
1 c. flour 1/2 c. sugar 1/2 c. butter TOPPING: 2 lg. eggs 2/3 c. sugar 2 tbsp. flour 2 tsp. grated lemon rind (fresh lemon) 3 tbsp. fresh lemon juice 1 1/2 c. sweetened flaked coconut 1. Line 8 inch or 9 inch square pan with foil. Lightly grease foil. 2. Mix flour and sugar into bowl, cut in butter until mixture resembles coarse crumbs. 3. Press evenly in prepared pan. Bake at 350 degrees for 20 minutes until golden brown. 4. Beat eggs, sugar, flour and lemon juice in large bowl with electric mixer. 5. Put mixer on low speed. Add lemon peel and coconut. Spread over crust. Bake until edges are golden. Cool on rack. Lift foil by ends onto cutting board. Cut in bars. Makes 24. |
