MEATBALLS IN DIJON SAUCE 
1 lb. lean ground beef
1 slice whole wheat bread, crumbled
1/4 finely chopped onion (1 sm.)
1 tbsp. Dijon style mustard
1/4 tsp. salt
1/4 tsp. pepper
Dijon Sauce (below)
3 c. hot cooked noodles

Heat oven to 400 degrees. Mix all ingredients except Dijon sauce and noodles. Shape into 24 (1 1/4") meatballs. Place on rack sprayed with non-stick cooking spray in broiler pan. Bake, uncovered until done and light brown, 20 to 25 minutes. prepare Dijon sauce; add meatballs, stirring gently until meatballs are hot. Serve over noodles.

DIJON SAUCE:

3 tbsp. flour
1 1/2 tsp. instant bouillon
1 c. skim milk
2 tbsp. Dijon mustard
1 tbsp. cornstarch
1 c. water
3 tbsp. finely snipped chives
1/4 tsp. pepper
1 tsp. lemon juice

Mix flour, cornstarch, bouillon and water in 2 quart saucepan; stir in remaining ingredients. Cook over medium heat until mixture thickens and boils; stir constantly. Boil and stir 1 minute. Approximately 350 calories per serving.
