BAKED DIJON CHICKEN 
1/4 c. dijon mustard
2 tbsp. minced shallots or onion
1/4 tsp. tarragon leaves, crushed
1/8 tsp. Tabasco sauce
5 tbsp. melted butter
1 cut up chicken
3/4 c. dry bread crumbs

Blend together mustard, shallots, tarragon, Tabasco, and 1 tablespoon melted butter in small bowl. Spread mixture over chicken pieces; coat with bread crumbs. Arrange chicken pieces in greased baking dish; drizzle remaining melted butter over chicken. Bake in preheated 375 degree oven 1 hour or until done. 4 servings.
