CORN BREAD SALAD 
8 green onions, chopped
1 big bell pepper, chopped
1 pkg. radishes, chopped
2 pkg. Jiffy cornbread mix
1 sm. bottle cucumber dressing
1/4 c. mayonnaise

Bake cornbread. When cool, crumble. Mix all ingredients. Refrigerate at least 2 hours before serving.

Has anyone ever eaten what I call a poor man's lunch? Take cooked corn bread and crumble it into a plate. Make a skillet of old fashion milk gravy or white gravy mix cooked. slice up some radishes and chop some green onions. Put some on top of the crumbled corn bread then top it with lots of good hot milk gravy. Mix it all up, add salt and pepper to taste then enjoy. It is really delicious.My husband taught me this. He grew up on it here in Kentucky. I could not believe how great it was until I tried it.Try it you may just like it and it is very inexpensive to make and filling.
