Combine 1 1/2 cups yellow cornmeal, 1/2 cup all purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt. Add 1 1/2 cups buttermilk, 2 tablespoons melted shortening and 1 beaten egg; stir to blend. Pour into greased 9"x9"x2" baking pan. Bake at 400 degrees for 20 minutes.
Cornbread dressing long has been a popular accompaniment for any bird, but especially for the holiday turkey. Throughout the south, this mealy stuffing is made by using the typically unsweet southern cornbread. Usually not used as a stuffing, it is baked outside the bird and ranges in moistness from very wet to slightly dry. When the turkey giblets are not used in the gravy, they are included in the dressing.
