RUSSIAN DRESSING 
1 1/2 c. mayonnaise
1/2 c. finely chopped cooked beets
1 tbsp. prepared horseradish
Salt to taste
1 tbsp. sweet pickle relish, optional

Mix mayonnaise and beets until dressing is pink. Mix in horseradish, salt (and relish). Refrigerate at least 2 hours before serving. Makes approximately 2 cups. Also good with sandwiches.
