PORK WITH BROWN RICE 
2 med. stalks celery, cut into slices (1 c.)
2/3 c. uncooked reg. rice
1 med. onion, chopped (1/2 c.)
2 tbsp. vegetable oil
1 1/2 c. boiling water
1 tsp. instant chicken or beef bouillon
2 tbsp. soy sauce
2 c. (1 inch) pieces cooked, smoked pork
1 med. (1 c.) green pepper, chopped

Cook and stir celery, rice, and onion in oil in 10 inch skillet over medium heat until rice is golden brown and onion is tender. Stir in water, instant bouillon, soy sauce, and pork. Heat to boiling; reduce heat. Cover and simmer until rice is tender and liquid is absorbed, 18 to 20 minutes. Stir in green pepper, Cover and simmer 10 minutes longer.

Beef with Brown Rice: Substitute 1 1/2 cups 1 inch pieces cooked beef for the pork and decrease soy sauce to 2 teaspoons.
