HAM LOAF 
4 c. cooked ham, finely ground
2 c. cooked rice
8 slices fresh bread, torn into sm. pieces
1 green pepper, chopped
1 med. onion, chopped
2 tsp. dry mustard
1 c. milk
3 eggs, lightly beaten

preheat oven to 350 degrees. Combine all ingredients as you would a meatloaf, mixing well with your hands. Add more milk if mixture seems dry. Pat into 9 x 5 inch loaf pan and bake 1 hour. Serve with Spiced Fruit Sauce. Serves 8.

SPICED FRUIT SAUCE:

1 c. canned pineapple tidbits
1 c. canned apricot halves
3 (1") sticks of cinnamon
2 tbsp. sugar
2 tsp. cornstarch
1/2 c. raisins

Drain pineapple and apricots, reserve syrups. Cut apricots into quarters. Combine syrups and spices in saucepan. Cover and simmer 5 minutes. Remove spices. Thoroughly combine sugar and cornstarch. Stir in small amounts of hot syrup, mixing well, then pour mixture into rest of syrup. Cook, stirring constantly, until syrup thickens and comes to a boil. Add pineapple, apricots and raisins. Continue cooking for 5 minutes, stirring occasionally. Use a gravy boat and ladle to serve.
