ORANGE-COCONUT CAKE 
3/4 c. shortening
Juice from 1 orange
1 1/2 c. sugar
3 eggs
3 c. flour (all-purpose)
3/4 tsp. salt
3/4 c. water
1 c. coconut
Orange rind, grated

Cream first 4 ingredients. Mix well. Sift flour and salt, add to creamed mixture, alternately with water, blend well. Add 1/2 cup coconut to cake batter. Rub remaining coconut with orange rind and sprinkle over frosting. Bake at 350 degrees for 30 minutes in two greased loaf pans.
