RED SNAPPER WITH CASHEWS 
2 lbs. fresh or frozen red snapper
6 tbsp. butter, melted
2 c. soft bread crumbs (3 slices)
1/4 c. cashew nuts
1/2 tsp. seasoned salt (optional)
Dash of pepper

Cut fish into 6 portions. Sprinkle with little salt. Drizzle 2 tablespoons butter over fish. Combine crumbs, nuts, salt and pepper. Add remaining melted butter. Sprinkle crumb mixture over fish. Bake at 350 degrees until fish flakes easily, when tested with fork, 25 to 30 minutes. 6 servings.
