RED SNAPPER WITH CASHEWS 
2 lbs. red snapper
6 tbsp. butter, melted
2 c. soft bread crumbs (3 slices)
1/4 c. chopped cashew nuts
Dash pepper

Arrange fish in a 9x9x2 inch pan. Drizzle 2 tablespoons butter over fish. Combine crumbs, nuts and pepper. Add remaining butter and sprinkle mixture over fish. Bake at 350 degrees for 25-30 minutes.
