STUFFED ARTICHOKES 
6 lg. artichokes
1 can of anchovies
5 or 6 slices of white bread
2 tbsp. parsley
1/4 c. cooking oil
1/2 tsp. salt
1/2 tsp. black pepper

Cut tips off of artichokes and stems. Make stem flat. Boil them about 1 hour. Let cool. Place in glass dish. Mix anchovies that are diced with bread (break up like stuffing) with parsley, salt and pepper and also cooking oil in bowl. Then stuff artichoke leaves (inside) with stuffing mixture and bake at 350 degrees for 1/2 hour.
