PEANUT BRITTLE CANDY 
1 c. sugar
1/2 c. white corn syrup
1 tbsp. unsalted butter
1 tsp. vanilla
1 tsp. baking soda
1/2 c. water
1 c. unsalted peanuts

Cook sugar, syrup, and water to soft ball stage. Add 1 cup unsalted peanuts. Continue cooking until syrup is light brown in color. Remove from heat. Add vanilla, butter, and soda. Mix well. Pour onto cookie sheet. Spread thin. When cool, break into pieces.
