COCONUT MIST CAKE | |
3 c. sifted cake flour 2 tsp. baking powder 1/4 tsp. salt 1 c. butter 1 lb. confectioners sugar (3 1/2 c.) 4 eggs, well beaten 1 c. milk 1 tsp. vanilla 1/4 c. fresh grated coconut 4 egg whites, stiffly beaten Sift once: flour (measure) add baking powder and salt; sift together. Cream butter thoroughly; add sugar gradually and cream together until fluffy. Add egg yolks; beat well. Add flour alternately with milk amount at a time, beating after each addition until smooth. Add vanilla, coconut, fold in egg whites quickly, but thoroughly. Bake in 3 greased layer pans at 350 degrees for 25-35 minutes. spread with frosting and sprinkle with fresh grated coconut on top. 7 MINUTE FROSTING: 1 1/2 c. granulated sugar 2 egg whites 5 tbsp. water 4 large marshmallows, broken up Pinch of salt 1 tsp. vanilla |
