Have everything you need within your reach before you begin cooking. Add 1 tablespoon of oil to wok or frying pan over high heat.
When oil is hot, add 1/4 pound of sliced meat or poultry that has been marinating for at least 15 minutes. Immediately begin stir frying by moving meat around skillet until done, about 1 to 2 minutes. Remove meat to plate.
Return wok or skillet to high heat. Add one more tablespoon of oil. When oil is hot, add 2 cups of cut up vegetables. Stir fry for 1 minute. Add 1/2 cup water or broth, cover and steam for 2 to 3 minutes, until vegetables are tender crisp. Return cooked meat to wok or skillet, stir well.
Dissolve one teaspoon cornstarch in one tablespoon of water or broth. Mix well and add to food in wok. Continue stir frying until juices thicken, about 10 seconds. Serve over steamed rice or oriental noodles. Serves 2.
