CHIMICHANGAS 
2 garlic cloves, minced
2 med. onions, diced
2 tomatoes, diced
1 tsp. ground cumin

Heat mixture for 3 minutes in 1 tablespoon vegetable oil then simmer for 7 minutes.

MEAT MIX:

2 c. cooked chicken, turkey or ground beef
16 oz. mild green chilies with tomatoes OR 8 oz. green chili and 8 oz. picante sauce
1 tsp. salt

Combine mixtures. Place spoonful of mix in middle of tortillas.

Spoon some cheese of your choice (shredded) onto meat mix. Close by folding in sides and bottom. Seal with toothpick like a diaper pin through sides, top and bottom.

Fry in cooking oil, 350 degrees, until tortilla begins to brown. Top to your liking, cheese, guacamole dip, tomatoes, lettuce and/or sour cream. Don't forget to take out toothpicks. Makes 8-10.
