CHICKEN SAUTE' AU PARMESAN 
1 chicken, cut into serving pieces (approximately 2 1/2 lb. chicken)
Salt & pepper
4 1/2 tbsp. butter
1 1/2 tbsp. flour
3/4 c. milk
1/4 c. heavy cream
1/4 tsp. nutmeg
1/2 c. Swiss or Gruyere cheese, shredded
1/2 c. Parmesan cheese
2 tbsp. bread crumbs

Sprinkle chicken with salt and pepper and brown on all sides in 3 tablespoons of butter for about 20 minutes. Preheat oven to 350 degrees. Melt remaining butter in a saucepan and stir in flour. When blended, continue cooking and add milk and cream, stirring rapidly with a whisk. When mixture is boiling, thickened and smooth, remove from heat and stir in nutmeg and shredded cheese. Sprinkle a baking dish with half the Parmesan cheese and arrange the chicken pieces over it. Spoon the sauce over the chicken and sprinkle with the remaining Parmesan cheese and bread crumbs. Bake until golden brown, about 30 minutes.

This is an extremely easy recipe - that is EXCELLENT to serve for an impressive meal. A lot of this can be made ahead. It is rather heavy, you could change the heavy cream for half & half. I chose to cut the nutmeg in half (to 1/8 tsp) otherwise it gives me heartburn. Nutmeg still translates well. Serve with a green salad and some bright-colored veggies for a stunning meal that will reap many applauds!
