CHICKEN & SPINACH DELIGHT 
2 (10 oz.) pkgs. chopped frozen spinach or 1 bag fresh
4 whole chicken breasts, boned, skinned & halved
1 c. mayonnaise
2 cans cream of chicken soup
1 tbsp. lemon juice
1 tsp. curry powder
1/3 c. grated cheddar cheese

Chop fresh or thaw frozen spinach and drain. Spread on bottom of a greased (spray with Pam) 9 x 13 inch dish. Put chicken pieces on top of spinach. Mix mayonnaise, soup, lemon juice and curry powder. Spread on top of chicken. Bake for 1 hour - sprinkle cheese over all and bake for 5 to 10 minutes longer. Serve with rice and salad to complete the meal.
