CREAM PUFF HORS D'OEUVRES | |
1 c. hot water 1 stick butter 1 c. flour 1/2 tsp. salt 4 eggs Heat oven to 425 degrees. In medium saucepan, heat water and butter to boil. Stir in flour and salt. Cook over medium heat, stirring vigorously until mixture leaves sides of the pan in smooth compact ball. (Approximately 1 1/2 minutes.) Add eggs, one at a time, beating vigorously after each until mixture is smooth and glossy. Spoon teaspoons of dough on ungreased cookie sheet. Bake at 425 degrees for 13-17 minutes. Cool and split. Use fillings. FILLING: 2 (3 oz.) cream cheese pimento or chive 1 c. fresh shrimp 1-3 tbsp. milk 2 tbsp. green onion 1/2 c. Italian bread crumbs Combine above ingredients adding enough milk to mix well but remain stiff. Place by teaspoonful into split puffs. Bake in 350 degree oven for 15 minutes or until melted. ADDITIONAL FILLINGS (No Bake) : Deviled ham with relish Cream cheese & olives, chopped Tuna salad Crab salad |
