SWEET POTATOES WITH CARAMEL
SAUCE
 
4 c. sweet potatoes, mashed
Salt (to taste)
2 tbsp. butter
Milk

In large bowl, with mixer, beat sweet potatoes, salt, butter and enough milk until mixture is light and fluffy. Spoon into 1 1/2-quart casserole, cover and keep warm in oven. Prepare Caramel Sauce.

CARAMEL SAUCE:

In heavy saucepan, heat 1 cup sugar and 1/2 cup butter until mixture melts and turns tan. Slowly stir in 1/2 cup cream. Cook until mixture is of sauce consistency. Stir in 1/2 teaspoon vanilla.

Spoon over sweet potatoes. Yummy!
