RICE PIE 
2 c. rice
1 tsp. salt
1 dozen eggs
2 c. sugar
2 lbs. ricotta cheese
Vanilla or lemon extract (1 sm. bottle)

Boil rice and add salt. Cook well and do not drain water. Let cool well. When boiling rice, add enough water to cover rice. Add eggs, sugar and cheese; mix well. Add vanilla or lemon extract, enough to taste (about 1 small bottle). It should be thick, not too watery. If necessary add a little milk. Grease pans and bake until well done. Bake about 1 hour or less at 325 degrees. (May add raisins.)
