SAVORY MEATLOAF 
1 med. onion
2 tbsp. butter
1 lg. clove garlic, crushed
3/4 c. chopped mushrooms
1 1/2 lb. lean ground beef
3/4 lb. lean ground pork
3/4 lb. ground veal
2 c. soft white bread crumbs
1/2 c. dry red wine
3 tbsp. soy sauce
1 tbsp. paprika
1 1/2 tbsp. Dijon mustard
Salt and pepper to taste

Saute onion in butter until soft, add garlic and mushrooms and saute, stirring a few times, 5 minutes longer. Blend with all other ingredients, put in a loaf pan and bake at 350 degrees for 1 1/2 hours.

This mixture freezes very well. Put uncooked mixture in loaf pans and freeze. When ready to use, put in frozen in preheated 350 degree oven and bake for about 45 minutes per pound.
