ITALIAN CREAM CAKE | |
1 stick butter, soft 1/2 c. shortening 2 c. flour (Gold Medal, all purpose) 2 c. sugar 5 eggs 1 tsp. baking soda 1 c. buttermilk 1 tbsp. vanilla 1 sm. pkg. coconut 1 c. chopped pecans Cream butter and shortening; add sugar and beat well. Add eggs, 1 at a time. Add flour, soda and buttermilk alternately with sugar and shortening mixture. Add vanilla, coconut and bake in 3 (9") pans for 40 minutes at 350 degrees. Ice with Cream Cheese Frosting. CREAM CHEESE FROSTING: 1 (8 oz.) pkg. cream cheese 1/2 stick butter 1 box confectioners' sugar 1 tbsp. vanilla Soften cream cheese at room temperature. Beat until smooth with 1/2 stick butter. Add confectioners' sugar and vanilla. Beat until smooth; add nuts and beat 1 minute. Spread on each layer on the tops and sides. |
