ROGER'S SPANISH RICE | |
2 c. uncooked rice 1 lb. bacon 1 med. onion, chopped 1 lg. bell pepper, chopped 1 lg. tomato, diced Cook rice to a dry consistency. Fry bacon crisp and crush. Use bacon drippings to saute onions and peppers. Add tomatoes for last 2 minutes. Stir rice, bacon, and vegetable mixture together. (Add about 1 tablespoon bacon drippings to mixture.) Ready to serve. |
