SOUTHERN SWEET POTATO PIE 
3 tbsp. all-purpose flour
1 2/3 c. sugar
1 c. mashed sweet potatoes
2 eggs
1/4 c. light corn syrup
1/4 tsp. ground nutmeg
pinch of salt
1/2 c. butter
3/4 c. evaporated milk
1 unbaked pie shell (9 inch)

Combine the flour and sugar. Add potatoes, eggs, corn syrup, nutmeg, salt, butter and milk. Mix well. Pour into pie shell.

Bake at 350°F for 55 - 60 minutes.

Yield: 8 servings.
