SWEET POTATO PIE ALA LEVETTA

2 (8 1/2 or 9 inch) pie shells
3 very lg. sweet potatoes
2 c. white sugar
6 eggs, lg. or egg beaters equivalent
1 tsp. nutmeg
1 tsp. vanilla
1 tsp. lemon flavor
1 sm. can evaporated milk
2 sticks butter

Boil sweet potatoes until done. Cool to the touch and then peel them. Add the butter while the potatoes are warm. Mix in the rest of the ingredients and pour into 2 unbaked pie shells. Bake at 350 degrees until outer edge is brown and firm to touch.
