CHICKEN BREAST SUPREME 
2 tbsp. butter, divided
Salt & pepper
4 chicken breasts, skinned (I use boneless, skinned breasts)
1/2 pt. whipping cream
1 tbsp. cornstarch
1/2 c. white wine
1 c. grated Swiss cheese

Melt 1 tablespoon butter in a large skillet with salt and pepper. Add chicken breasts and brown lightly. Remove to a casserole dish.

In same skillet add another tablespoon of butter, whipping cream and cornstarch (I dissolve cornstarch in 1 to 2 tablespoons of cold water before adding to whipping cream). Cook slowly and stir. Add white wine. When sauce thickens pour over chicken. Cover generously with grated cheese. Bake covered at 350 degrees for 1 hour. Remove top the last 5 minutes so the cheese will brown. Serves 4.
