1 lb. fresh spinach, well washed
4 c. Semolina flour
2 eggs, lightly beaten
In saucepan, steam spinach in 4 tablespoons water, well covered, until tender. Drain well, pressing out all the water. Then force through a food mill, or chop in a food processor. Put the flour onto a board, make a center well and add the beaten eggs, and finally the spinach. Now knead until dough is well mixed. Knead for 15 minutes, until it is smooth, adding water if it is too dry or flour is too soft. Makes a healthy pound! Serves 5 to 6.
